What I Eat in a Day: Tuesday No Leaving House Edition

Breakfast: Pancakes with peanut butter chips. Makes peanut buttery goodness. The peanut butter chips melts. (1/2 cup flour, 1/2 cup soy milk, 1/4 cup applesauce, and 1 tablespoon baking power.)

Lunch: Smoothie bowl/banana ice cream. (Blueberries, soy milk, and frozen bananas blended. Added on top some blueberries and some Super Seed & Ancient Grain Blend with buckwheat, sprouted millet, chia seed, golden flax seed, quinoa, shelled hemp seed and amaranth.)

Dinner: 3 red potatoes and tofu. (First time making tofu and it turned out great. I ate more tofu and potatoes, took the picture before I was finished with cooking the tofu. Cause I was hungry and can’t seem to wait to finish cooking before I dig in.)

Snacks: Apple (not pictured)
