I baked and took vegan cupcakes to my household’s movie night at school that we were hosting and everyone loved them. Some of the comments I got were, “It’s hard to bake really good vegan.” They all, most of them, knew that it was vegan beforehand because I posted on Facebook about being able to eat as much batter as I want and it doesn’t matter, since its vegan. So here is the recipe that I used.
1 cup soy milk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 and 1/2 teaspoon vanilla extract
1 cup flour
1/2 cup coco powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1. Preheat oven to 350.
2. Whisk soy milk and vinegar in large bowl. Set aside for a few minutes. Add sugar, oil, vanilla Extract to soy milk mixture and beat until foamy.
3. In a separate bowl, mix flour, coco powder, baking soda, baking powder and salt. Add (in two batches) to the wet ingredients and beat until there is no lumps.
4. Pour into liners and bake for 18 to 20 minutes.
